An aquatic/semi-aquatic plant that establishes itself in shallow bodies of water, such as ponds, streams & on the edge of rivers. Often cultivated for its edible young shoots, the lobed leaves can be eaten raw, cooked or dried. They have a peppery flavor & are crisp. It needs to be harvested before the buds appear as the leaves turn bitter after flowering. Rich in Vitamin C. Great in sandwiches, salads or makes an excellent soup! Part shade. 30 days to harvest.
