Small to medium-sized chili pepper, prized for the hot, burning sensation produces in the mouth when eaten. Ripe, the Jalapeno can be 2-3 1/2 long & 1 wide w/rounded tips. Green & mature to dark red. Used fresh, in salsa, pickled, canned, dried & made into jelly at both the red & green stage. On the Scoville scale, it rates between 2,500 & 10,000 Scoville units in heat.
