Epazote has a distinctively sharp, herbal flavor, reminiscent of oregano & fennel w/minty, pine notes. Well-known to Mexican & Caribbean cooking, popular for bean dishes & also found in moles & soups. The older leaves on this culinary herb have a stronger flavor & should be used sparingly.
